Paige Bailey-Gayle's 29th-minute effort was ultimately enough to seal a second win on the bounce for the Foxes - their fourth win in five matches in all competitions.
City remain fourth in the FA Women's Championship, but have closed the gap to leaders Durham to just a solitary point, and Plumptre believes they were deserved victors in Quorn.
"I think defensively, we just wanted a clean sheet," the Leicester-born defender told LCFC TV, pointing to Leicester's patience in the game. "That was really good for us.
"We came into the game just wanting to be patient, you know, enjoy being on the ball, recycling the ball around the back.
"I think we did that quite well today, just being patient, because we knew that they were a really good defensive team.
"They stayed narrow and I think it was just being patient in terms of finding the gaps when they came.
"If they're not, keep the ball round the back and use Kirstie [Levell], the goalkeeper, as well and just be patient with ball.
"I think that's been a bit of a struggle for us. You know, we try and go forward a lot because we've got really good attacking players and they want to be on the ball all the time, which is great.
"But it's just picking moments to do that and making sure that we have that synergy between our attacking players and defensive players.
"In this game, everybody got on the ball for one another, the midfield found each other, the wide players could interchange with our full-backs, and I think we did that really well today."
Plumptre also reserved praise for match-winner Bailey-Gayle after her composed finish wrapped up the points for City on Sunday.
"I think she's really good in terms of getting on the outside and taking people on," the 22-year-old continued.
"The goal came from a switch which we said 'we need to keep recycling the ball' and then when we find time to do it, then do it.
"I think her positioning was really good in that sense and her composure in front of goal has just been brilliant recently. Hopefully she keeps that up - no pressure!"
With the Foxes now firmly in contention at the top of the FA Women's Championship, ahead of next Sunday's visit to Coventry United (2pm GMT kick-off), Plumptre says consistency is now key. 
"This league is crazy right now," she added. "Some people are playing really well, and one week, people could be winning and, in the next week, they could be dropping points.
"I think we can see that today. I think within the top five teams or something, we're all really close, so we just can't get complacent.
"We've got to keep making sure we're doing the things that we've been coached to do and making sure that we just keep the momentum going forward.
"Hopefully, this is where we keep pushing and keeping clean sheets, fingers crossed."
