The Foxes emerged victorious courtesy of a trademark breakaway goal from Jamie Vardy in the 58th minute, the 31-year-old’s striker's seventh Premier League effort of the season.

While Vardy’s 95th competitive goal for the Club sealed the points, City's ninth top flight win of the campaign was also attributable to their defensive solidity in Merseyside.

Reflecting on Leicester’s third win in four matches over the festive period, right-back Simpson said: “Over the years coming to Goodison Park... we know it’s tough.

Simpson: We Dug In Deep

Danny Simpson spoke to LCFC TV after a 1-0 victory at Goodison Park on New Year's Day.

“They’re always pretty even games when we play against each other but we dug in deep from the start to the end.

“When you’ve got Vards (Jamie Vardy) up front, if he gets a chance you think he’s going to score. Towards the end, we just had to dig in and it was a perfect away performance from us.

“They’ve got some great players. I think we were solid as a team, there was a little mistake at the back and Ricky [Ricardo Pereira] put Vards through and he’s always the favourite.

I wish everyone a happy New Year and hopefully there’ll be a lot of success this season for everyone involved with the Club.

“He loves that channel down the left on his weaker foot and you don't doubt him, it was a great finish.”

Following his fourth Premier League outing of the campaign, Simpson was also thrilled to secure a well-deserved clean sheet in Liverpool.

“Everyone had to be on the same page,” the 31-year-old right-back explained, speaking to LCFC TV at full-time.

Goal: Everton 0 Leicester City 1

Jamie Vardy scores at Goodison Park as Leicester City defeat Everton 1-0 in the Premier League.

“Everyone was covering each other, putting their bodies on the line, heading everything, clearing everything, and that’s what you have to do, especially in the Premier League away from home, you have to do that.

“As a defender, to get a clean sheet against a team like this at their patch, it’s a great feeling.

“I wish everyone a happy New Year and hopefully there’ll be a lot of success this season for everyone involved with the Club.”
